Some of the ways to achieve good business in the summer months that we use and you could try are:
Offer an outdoor dining area. People want to be outside, the season is short in many areas of the country.

Know your competition and what they're up to in the summer months.
Take advantage of your local summer events so you can advertise what your business can offer guests during these months. We've done summer festivals, block parties, outdoor concerts to name a few that help us compete during warm weather.
Offer entertainment. Your local musicians want work and your customers would love having a place to go for free entertainment while they dine. We usually have the bands start later at night to not interfere with diners that have no interest in the music. Sometimes, a bar area is a great place to host a band and you'll have a whole new set of customers coming just for drinks and music.
